2022 OURS Chardonnay

The Wine - Our first offering is a 2022 vintage which is 100% Chardonnay hand-picked from a sustainably farmed vineyard in Santa Barbara County.  The fruit was whole cluster pressed with minimal intervention techniques during elevage (not even an acid add was made) with only a small amount of S02 added for protection.  The wine was fermented and aged in amphora (partially coated in beeswax) and new French oak on fine lees for 9 months undergoing a 60% malolactic fermentation.  The wine brings a smooth and unctuous mouthfeel without being overly buttery with creamy tropical fruits, lemon, and vanilla.  

Presentation - Every one of our labels are made on a 111 year old antique letter press.  We use a thick cotton paper that has to be hand labeled, because we do that, we are able to make sure everything is perfect, including the logo facing forward on the cork when you look at the front of the bottle. We bottle our wine by hand, unfined/unfiltered, and finally finish it off by numbering each bottle by hand.
